The word is spreading; Mr Hyde is one of the spots to be as warmer weather encourages us to get out and about.

Joint owners, 30-something Mark Stawicki and Rob Roszbach, have invested a lot of time, energy and money into making Mr Hyde a spot you'd like to sit down and spend a while.

'This is one of the five historic buildings in Geelong,'' Rob says. 'The owner of the building Greg Milner is also a Geelong boy and was incredibly helpful and generous as Mark did the design to turn it into Mr Hyde. The terrazzo floor, ceiling, architraves, cornices are all original, but we had to build the kitchen and naturally replace all the wiring, electrics, gas, plumbing. It was a complete fit out.''

Mr Hyde retains the feeling of graciousness and style; a feeling of grandeur from a time gone by in spite of the ostrich skin booths and the fabulous iridescent aqua bar.

As well as the large main room with booths and chesterfield sofas, Mr Hyde has two private function rooms, fitted with chandeliers and luxurious furnishings.

Consistently recognised by The Age Cheap Eats Guide, Mr Hyde offers Italian-style fare ranging from thin-pressed pizzas to Hyde-style parmigianas to gluten-free and vegetarian bites available on request.

Mr Hyde has an extensive wine list, arrays of liqueurs, brandy, gins and cocktails.
