Fresh from curating some of the world's hottest venues in New York and London, Ben Hehir takes the reigns at the Dutchess as Venue Manager.
The drinks menu created by Ben includes fun and vibrant cocktails, plus a carefully crafted wine list that caters to every palate, with an emphasis on reds to complement the meat oriented menu.
The latest offering by Melbourne chef Justin Wise, the Dutchess food menu reflects Wise's fun and daring style. The venue's Raw Bar serves oysters, sashimi and beef tartare, which can be ordered either at the bar or from the dining area.
Dry-aged steaks are another prominent feature of the menu, with everything from Gippsland Porterhouse to a Tomahawk Sher Wagyu.
The atmosphere at the Dutchess each night will be carefully tailored to encourage guests to 'stay and play for the evening'. Patrons will be able to book a booth as a 'home base' where they can enjoy an all night experience eating, drinking and dancing.
Resident DJs will play a mix of soul, funk, punk and anything you can't find in the top 100, plus the DJ sets will be available on Dutchess' own Spotify channel each week.
