DHABA at the Mill, a place where food brings people together.
In India, Dhabas line the roadsides, serving fresh curries to the common man and woman. They are simple and honest, a tent to cover pots perched above open fire, surrounded by tables and crowds. At Kyneton's DHABA, this simple authenticity is our aim. Housed in a historic post and beam steam mill, DHABA is a place for locals and visitors alike, to share delicious Indian food as well as stories, laughs and our cultures.
Jessi grew up in Northern India where his mother's village kitchen was his classroom. Most of the day was spent around and preparing food. Daily, he watched her make fresh yoghurt, butter and lassi from the buffalo milk she gathered herself. She made dough for roti (flat, round bread) that was baked over an open fire and served without fail, for each three meals, every single day. The door was always open and guests were part of their everyday and they always...always shared food. Jessi has never wanted to do anything else but be the one cooking that food to be shared.
Jennifer was born in Brooklyn with Italian and Syrian ancestry so again, food was a very big part of life. Her fondest memories are of lively Sunday afternoons where the whole family squeezed into the tiniest of kitchens. There were endless plates of food and many, many conversations taking place at once, each one louder than the next.
This ritual of gathering around food is instinctive for us but the power of food as a medium for this still intrigues. So, please join us at this special kitchen. Enjoy fresh, delicious flavours from the ancient land that we love, made by people that truly respect the tradition of cooking for sharing.
